THE PERFECT GRASS FED BURGER

Want to cook the perfect burger? Add lots of onions, which deliver moisture to your burger, and form thick patties which prevents them from cooking too fast and drying out!

INGREDIENTS

1.5 lb Estancia grass fed ground beef
1 small onion, coarsely grated
1.25 tsp kosher salt
.5 tsp freshly ground black pepper
1 tbsp vegetable oil
4 buns, if desired

PREPARATION

Patties can be formed 4 hours ahead. After mincing the onion, use your hands to gently mix the onion, ground beef, salt, and pepper in a medium bowl. Gently shape into 4 patties, about 1.5” thick. Don’t overpack, a loosely formed patty will be more succulent.

COOKING

Heat oil in a large cast iron skillet over medium-high heat. Season paties with salt and pepper, place in the skillet, and immediately reduce heat to medium. Cook 4-6 minutes per side for medium-rare.
